Cutting Boards

"Which cutting board is better, wooden or plastic?" "Which cutting board is more sanitary, wooden or plastic?" These questions are very tricky to answer and remain controversial. Some of the research shows that more bacteria was found on the surface of a wooden cutting board than a plastic board immediately after cleaning the cutting boards. However, the research revealed that bateria on the wooden board die eventually in the end, while bacteria never died on the plastic board. So, if you buy a plastic board, you might need to change the board constantly when you see scratches and cracks. However, if you want to purchase a cutting board for long-term use, a wooden cutting board would be the smarter choice.

Wooden cutting boards have been traditionally preferred by customers over plastic boards for several reasons. Woods are known to be self-healing, which means that shallow cuts in the board can close up on their own. It helps to prevent bacteria from staying on the board. Also, woods are less likely to damage the edge of a kinfe. Usually, hardwood with relatively small pores like Teak and Bamboo are preferred as cutting board materials. You can come across edge-grain cutting boards and end-grain cutting boards. An edge-grain board is made of strips of hardwood. The design looks charming and attractive. On the other hand, an end-grain cutting board is made of pieces of hardwood and they are grafted together vertically. An end-grain board has a fibrous cutting surface, making it more scratch-resisting. However, both of cutting boards are strong, sanitary, and easy on a knife blade.

Plastic cutting boards also have their own benefits.  They are usually priced lower than wooden boards. You can also rinse the plastic board with a strong chemical cleaner like bleach. However, a plastic board is more likely to damage the blade of your knife. Bacteria found on the grooves of scratches on the plastic cutting board is less likely to be removed by cleaning than the wooden board.

Cutting boards are made out of materials besides wood and plastic, such as glass, steel, marble or acryl. Glass and steel cutting boards can be easily cleaned, and they tend to last longer than boards of other materials. However, the hardness of glass and steel is more likely to damage the edge of your knife than wood and plastic.
