If you are looking for a traditional German chef knife, the Wusthof Classic Ikon knife is one of your best options. Wusthof has focused on producing forged blades created through a special heating process, adding extra strength to the blade, thereby creating one of Europe’s traditional high-end chef knives.

The Wusthof Classic Ikon Knife adheres to the special features of traditional forged German Chef Knives. These forged knives feature full-tang and bolster. Full-tang means that the blade extends towards the handle as one piece, creating a sophisticated look and preventing the separation of the blade from the handle after long-term use. The double bolster (the collar between the blade and handle) designed for the Wusthof Classic Ikon Knife provides the perfect balance between blade and handle when cutting and will attract those who prefer a slightly heftier chef knife.

The Wusthof Classic Ikon Knife is made of a high-carbon German stainless steel blend, which combine the strengths of both carbon and stainless steel. Usually, high-carbon knives tend to have a keener edge and are easier to re-sharpen at home, but tend to be vulnerable to rust and need extra care for maintenance. However, by adding stainless the to high-carbon, the features of stainless steel, such as resisting corrosion, can compensate for the drawback of high-carbon metal. It makes it much easier for the beginner cook to maintain their chef knives in a proper manner.

The Wusthof Classic Ikon Knife comes in various sizes from 6 to 10 inches, and with two color options, black and white. Their contoured handle will make for a comfortable and secure grip.

So, for those who prefer to use a traditional hefty European chef knife and want to have a easy maintenance and upkeep, the Wusthof Classic Ikon Chef knife will be for you.

Reviews from Wusthof Ikon Cook's Knife Users

Aesthetically, the new design is more pleasing, and has modernflowing lines. The classic Wusthof red sticker is formed into the blade itself, so no more of the sticker coming off during washing! Also, the tang extends all the way to the bottom of the handle, ending in a sleek metal cap. Lastly, the bolster is much thinner, making the knife easier to sharpen.

The first things I noticed were the weight and the balance. This knife is heavier than knives of the same type and size from other manufactures. It is also very well balanced. The next thing I noticed was how well it fit into my hand; the profile of the handle is oval instead of squared off. This knife comes from the manufacturer very sharp, as you'd expect, but it is very easy to maintain the edge unlike previous knives we've owned.

This knife is ridiculously nice. It has seen use 4x per week, 30 minutes at a time on average, for 6 months now, and I've still not had to sharpen it. A minute or so of swiping on the honing steel keeps the edge super sharp.

This knife is comfortable, efficient, and really holds an edge. I love tabboule, which entails chopping a LOT of parsley very finely, and this knife makes short work of it. It feels great in the hand, looks great on my knife magnet, and works great on a wide variety of ingredients. I don't cook much meat so I can't really assess it in that regard, but it is incredibly versatile
