Zwilling JA Henckels originated from Germany and has been dominating the cutlery industry around the world with their great reputation and popularity. Recently, Henckels introduced some cheaper lines of chef knives through massive production and may not have the quality expected from their loyal customers. So, you need to be careful in choosing your Henckels Knife.
Among the numerous Henckels chef knives, the Twin Pro-S Chef Knife is definitely one of the best lines produced by Zwilling JA Henckels. Henckels Twin Pro-S shares the unique features of a traditional European high-end knife.
Like other good quality western chef knives, the Twin Pro-S is forged, which requires a complicated manufacturing process, including intensive labor, and is not mass-produced by machines. The forged knife goes through a special heating process, making for a strong and long-lasting blade. Also, the Twin Pro-S has a full-tang, which extends the blade into the handle, which creates a great look as well as preventing the separation of the blade from the handle after long-term use. The bolster of the Twin Pro-S, the bridge between the blade and handle, gives great balance to the knife, making cutting much more comfortable. All these characteristics make the Twin Pro-S a hefty, well-balanced and strong knife.
Another special feature of the Twin Pro-S is that the knife is made of high-carbon steel and not combined with any stainless steel. Carbon is very important in making a strong and sturdy knife. The more carbon the knife has, the harder the blade is and the better the knife performs in the kitchen.
One drawback of having a high-carbon steel blade is that high carbon steel is vulnerable to moisture and more easily corrodes than a stainless steel blade, therefore, requiring more careful and constant upkeep. In order to compensate for this drawback of high-carbon steel, Henckels invented their own special Friodur Ice Hardened process, which increases resistance to moisture and prevents stains on the blade. It makes it easier to maintain the knife in good condition, even for beginners.
For those who want to use a western-style hefty and sturdy knife, go for the Henckels Twin Pro-S.
Reviews from Zwilling J.A. Henckels Twin Pro S 8-inch High Carbon Stainless-Steel Chef's Knife Users
The Henckels Pro S 8" was the best. The 10" seemed top heavy but I'm sure someone else may feel different. The blade holds an incredible edge as well. I steel the blade before each use to keep the edge in the best cutting condition.
It actually makes prep work enjoyable. Chopping, slicing, dicing, etc. are now effortless. It's razor sharp and stays honed that way for quite sometime under heavy use. I am very good at maintaing its edge by hand, and its high quality carbon steel blade lends itself perfectly to this task compared to stainless steel blades.
this knife has a nice heft and a good edge and should last most home chefs a lifetime. Give it a few strokes with the steel every time you use it and the edge will last for years without needing to see a sharpening stone.
Well, I must tell you, I totally adore this knife! It is my best friend in the kitchen and I use it pretty much for every kind of food except bread cutting. I could not afford to buy the whole set and decided that if I could have one knife that cuts just about everything I would be a happy gal. I am totally satisfied with this knife and recommend it highly.
All this said, I will say that the high carbon content of the Henckels knife makes the blade quite hard and if you let the edge go entirely, you will need to find a professional to return the knife to razor sharpness as doing it yourself is very difficult.
