The blade is ice-hardened, providing extra strength for the blade and preventing stains on the blade. Also, the high-carbon forged steel is a good indicator of a high-quality blade. A forged knife goes through a complicated heating process, which makes the blade very sharp. This manufacturing process requires intensive laboring, and is not mass produced by any machines, thereby making the forged knife much more expensive. The forged high carbon knife is known for its sharp, strong, and slightly heavy blade, which is easily sharpening at home. Keep in mind that the blade is not stainless and, therefore, not resistant to rust. You will need more careful up-keep and maintainence in order to keep your knives in good condition.

I purchased a set of J.A. Henckels Four Star knives in 1987, and I am still using them today — a quarter-century later. They have survived two divorces (not my ex's fault; the knives were far sharper than I was), a dozen moves back and forth cross-country, and most important: daily use, week in & week out, in professional kitchens and at home.

They feel like a precision tool in your hands, cutting through anything you throw at it smoothly and with ease.

this is the best overall value you can get (considering what the specific budget and the knives you require). I guarantee that you can't get a better set for under $200.00… period. The feel is great and the quality is outstanding.

 

The Chefs Knife is a little heavier than my Santoku however it didnt fatigue my wrist the way that the PC knives have (I tried the PC knives, willing myself to love them due to the fact that I could get them at half price! But I just couldn't fall in love with them). I'll never go with anything but Henckels again, and with a deal like this you cant go wrong.

 

I also love that this block (unlike others that are more expensive) is large and has open slots to add to the collection. I separately purchased the 7" Santoku, the Bread knife and the 6" utility/slicing knife and a set of steak knives to complete my set.
